Did you say street party?

Party fever is upon us this weekend so if you’re heading to a celebration why not try one of the recipes. I’m telling you they’ll go down a storm!!!

Sweet Chilli Jam
Spice up those cucumber sandwiches with this bad boy. Also great with cheese and pork pies!
Ingredients
– 4 red peppers, deseeded & roughly chopped
-5 red chillies, chopped
– half finger size of ginger, peeled & chopped
– 4 cloves of garlic
– 200g can cherry tomatoes
– 375g golden caster sugar
– 125 ml red wine vinegar

1. Place the peppers, chilli, garlic & ginger into a food processor & blitz until finely chopped.
2. Tip into a large pan with the sugar, tomatoes and vinegar
3. Bring to the boil, skim off any scum on the surface & then simmer for approx 30mins, stirring occasionally
4. When the jam is sticky continue to cook for 10mins stirring frequently
5. After 10mins allow to cool slightly before transferring into sterilised jars
6. Pop into your picnic hamper : )

Jubilee Sponge Cake
How can you resist!
Ingredients
– 200g caster sugar
– 200g butter
– 4 eggs, beaten
– 200g self raising flour
– 1tsp baking powder
– 2 tbsp milk
Topping
-double cream, whipped
– strawberry jam
– raspberries & blueberries

1. Heat oven to 170C. Butter & line one large square tin
2. Put all the ingredients, about from topping ingredients, into a bowl & beat until smooth
3. Place mixture into the lined tin & bake for approx 20mins
4. After 20mins take out of oven and allow to cool
5. Spread a layer of strawberry jam on top of the cake & then add the whipped cream
6. Decorate how you like with fruit
7. Enjoy : )

    I’m really enjoying reading your blog. I love chilli jam but always buy it ready made. This has inspired me to give your recipe a try this week. Wish me luck, and keep writing the great posts!
