Dad’s Day Macaroons

My Dad is pretty awesome so I thought I’d make him a Fathers day present. If you thought, like me, that macaroons were the bitch of the baking world think again! This recipe is super easy with delicious results! Give them a go for your fabulous Dad (that’s if you can bare to part from them!) I also made my own gift box : )

Vanilla Macaroons
Ingredients
Macaroons
– 75g ground almonds
– 115g icing sugar
– 2 egg whites
– 50g caster sugar
– 1/2 tsp vanilla extract
Filling
– 55g unsalted butter
– 1/2 tsp vanilla extract
– 115g icing sugar

Recipe
1. Line tray with baking paper. Blitz the icing sugar & ground almonds in a food processor until you have a sand like consistency. Then sieve into a large bowl.
2. Whisk the 2 egg whites until they form stiff peaks. Gradually add the caster sugar whisking after each addition. Whisk in the vanilla extract.
3. Fold the almond mixture into the egg whites a third at a time. Use a spatula for this. Once everything is combined transfer into a piping bag. I used a plain 1cm nozzle.
4. Make small rounds onto the baking paper. A good tip is to tap the baking tray on your table to get rid of the peaks and make the macaroons smooth.
5. Pre heat oven to 160c. Leave the macaroons for 30mins at room temp so they form a slight crust. Then bake for 10-15mins. Leave to cool for 10mins.
6. Mean while whisk together the butter & vanilla extract. Gradually add the sifted icing sugar to form a buttercream.
7. Once the macaroons have fully cooled use the buttercream to sandwich pairs together.
8. Enjoy, enjoy and enjoy (just make sure you leave enough to fit into your gift box!)

I made this cute gift box by making a stencil on plain card, see below. Box dimensions were H 4cm W 4cm L11cm

    Ooooh.. I think you’re awesome because you think macaron recipe is easy. For me, it’s easy but tricky. Sometimes I got it right, sometimes not 😦
